I love that it has an optional OLED terminal between the buttons. I would assume that it would face outward so it could be seen through modified grips?

I don't think it would be an issue. I might suggest that you start a thread of your own as your project is very interesting and I would love to know more about it. I think the Arm M0+ chipset is optimal for paintball boards. There have been several entrance to the dev board market recently (Teensy LC, Zapta Pro-Mini, Femto-USB) that utilize this chip and I am excited to start playing with them.
The feeling when the first board powers up and does what it is supposed to do.. is THE BEST!
